Stay
The differences between hotels and a guesthouse or B&B are not always well defined, but in general it is fair to state that:

Safari lodges / game reserves
Inside a (privately owned) game reserve. More often than not game drives or game activities and meals (sometimes even drinks) are included.

Villa / appartment
Fully equipped and usually very well appointed (privately owned) appartments or homes in superb locations. Usually rented out for longer periods (say a week), mostly either in the bigger tourist areas (think Cape Town, Knysna, around Durban) or on golf estates. Ideal for families or bigger parties travelling together, and not wanting to move every other night.
